Today is Pancake Tuesday

Though today is Mardi Gras, Fat Tuesday, Shrove Tuesday all over the planet, here in Ireland it is PANCAKE TUESDAY!!   All the stores have special  displays of pancake items in honor of this special day.  Haven't determined if there is anything else they do, but so far have mostly seen the pancake thing.  Apparently Pancake Tuesday is recognized in some other  countries, but this is the first I ever heard of it.  Perhaps eating pancakes helps one to contemplate their issues and what they need to give up for Lent?  I don't know anymore; the last time I gave something up for Lent, it  was organized religion!


Pancakes are not quite the same here, as most of the mixes are more like crepes than regular American pancakes.  We found a mix that claimed it was an American Pancake mix, but it was still more like a crepe than we had expected.  The pancake mixes come in very small packages.  No giant BisQuick boxes to make a gazillion pancakes over the course of your lifetime!  I could just make my own mix I suppose...

This afternoon are parent teacher conferences for Haley.   I am looking forward to meeting her teachers, but I am NOT looking forward to trying to find a place to park.  The front lot is very small and if you get to the end of it and found no spot, you can't get turned around, so you have to just back up.  The back lot may be better - at least I hope so.   In general  in Ireland the parking spots are tiny and I SWEAR there is a real aversion to angled parking!  Though the Liffy Valley Shopping Centre does have a parking lot with angled parking, it's the only one I have seen so far.  Anyway, since it is Ireland, if all else fails I can just pull slightly off the road and park and just expect my car won't get hit!
